Ingredients:
1½ cups self rising flour
8 tablespoon butter
½ cup water
2 cups sugar; divided
4 cups peaches; peeled and sliced
1½ cups milk
Cinnamon
Vanilla ice cream
Directions:
Preheat oven to 350 degrees. Combine peaches, water and 1 cup of sugar in saucepan and mix well. Bring to a boil and simmer 10 minutes. Remove from heat. Place butter in Bean Pot and put in oven to melt. Mix flour, 1 cup sugar and mix slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Gently spoon fruit mixture on top and pour in syrup. Sprinkle cinnamon on top if desired. Batter will rise to the top during baking. Bake 30-45 minutes. (Be sure to use self rising flour so the batter rises.)
Can be served with vanilla ice cream.
