Ingredients:
4 - 6 potatoes 
 1 green onion
 4-5 stripes of bacon
 2 garlic clovers
 1 cup shredded cheddar cheese (or pepper jack)
 1/2 cup sour cream 
 1/2 stick of butter (melted)
 
Directions:
Peel & slice potatoes, place in bean pot. Chop green onion & place in medium bowl.  Fry bacon strips & chop into fine bits, add to bowl.  Press garlic cloves into bowl.  Add cheese, sour cream and butter to bowl. Mix together & pour over potatoes. Can also add banana peppers or sliced jalapenos. Cover with lid and bake at 400 for 20 minutes or until potatoes are done.
