Meatballs and Sauce

Meatballs:
1lb. ground meat (beef or turkey)
2 Tbsp. ricotta cheese
1/2 cup panko breading or cracker/bread crumbs
1 egg scrambled
2 Tbsp. Pizza Dip mix

Sauce:
1-24oz jar of plain marinara/pasta sauce
1-12oz can of crushed tomato plus tow cans of water
1 Tbsp. Pizza Dip mix
1 Tbsp Greek Salas Dressing Mix

Mix meatball mixture together and form into 1"balls. Drizzle in a iron skillet with olive oil and drop meatballs into skillet. Brown on three sides, remove meatballs to a Bean Pot and top with sauce mixture. At this point you can either: Place in fridge for up to three days or bake at 350' for 30 minutes. Serve with your favorite pasta.

Turkey Noodle Casserole


Ingredients:
2 cans Cream of Mushroom Soup (Regular or 25% Lower Sodium)
1 cup milk
2 cups frozen peas
2 cups turkey
4 cups egg noodles
2 tablespoons bread crumbs
1 tablespoon butter

Directions
STIR soup, milk, peas, turkey and noodles in bean pot.
BAKE at 400°F. for 30 minutes or until hot. Stir.

MIX bread crumbs with butter in bowl and sprinkle over turkey mixture. Bake uncovered for 5 minutes more.

Bean Pot Sloppy Joes


2 lbs ground beef or turkey
1/4 cup chopped green bell peppers
1/4 cup chopped onion
cook in microwave for 10 to 12 minutes until ground beef is done.
 
Add
1 Tbs grey poupon mustard
1 small bottle of your favorite bar b q sauce
1 small jar of apricot preserves

 Cook in microwave an additional 5 minutes serve on hamburger buns
Delish!!!

13 Minute Meatloaf

Ingredients:
1.25 lb. ground turkey or beef
½ cup bread crumbs
¼ cup ketchup
1 egg
salt and pepper to taste
2 T Worcestershire Sauce

Directions:
Mix together in the Bean Pot – shape into a loaf, put lid on and microwave for 13 minutes.
Cooking time may vary by size and microwave

Pizza Braid

Ingredients:
2 pkg. crescent rolls
1 lb. ground beef/turkey or a package of sliced pepperoni
¾ bag shredded mozzarella cheese
1 - 8 ounce can pizza sauce
1 small onion - optional
1 small green pepper - optional
½ cup mushrooms- optional

Directions:
Brown ground beef/turkey, drain. Mix meat, cheese, & veggies together. In the Hospitality Set, place the croissant triangle around the edge of the platter with the big side inside. Press down bottom of crescents so they form a solid bottom. Spread pizza sauce all over crescents. Then add mixture on top of sauce. Begin braid by lifting each opposite end and twist them together.

Bake at 375 degrees for 30 - 35 min.

Hot Turkey Sandwiches

Ingredients:
6 c. diced turkey
1 can cream of mushroom soup
1 can cream of chicken soup
1 onion, chopped
1/2 c. Miracle Whip
3 cups Velveeta cheese (American) diced.

Directions:
In Bean Pot, mix together diced turkey, cheese, cream of mushroom soup, cream of chicken soup, onion, and Miracle Whip. Cover and bake on 200 degrees for 3 to 4 hours (only 1 hour for left overs turkey after Thanksgiving). Stir turkey mixture occasionally.  Serve on your favorite hoggie or bun.

Smoked Turkey Almandine

Ingredients:

3 large smoked turkey legs
8 oz Sour Cream
1 can of Cream of Chicken Soup
1 1/2 sticks Butter
1 sleeve Ritz Crackers
Slivered Almonds

Directions:
Remove meat from bone and put in bottom of Bean Pot.    
Mix together sour cream and cream of chicken soup and pour over turkey.
Melt butter and pour over all. Crush up Ritz crackers and spread over all.
Place slivered almonds on top and bake at 350 about 30 minutes with lid off or until lightly brown.              

Could use more meat if desired                                     

Another option is using cooked chicken instead of turkey

Winter White Chili

Ingredients:
1 pound ground turkey
1 chopped onion
1 16 ounce can white beans drained
1 14 oz. whole kernel corn drained
1 14 ounce can chicken broth
Chili Powder to taste

Directions Brown meat and onion drain and add to Bean Pot. Add remaining ingredients and cook in microwave for 20 minutes. Serve in the soup and sandwich set, just add chips or bread.
