Beef Stew

Ingredients:

1 lb. round steak, cut into chunks  
6 cups beef broth
1 large yellow onion, chopped

3 bay leaves
2 tbsp. olive oil

1 ½ tsp dried thyme
4 cloves garlic, chopped

1 cup celery, diced
1 can (14.5 oz) diced tomatoes

1 cup carrots, diced
2 cups potatoes, chopped

Salt and pepper to taste

 
Directions:

Heat olive oil in saucepan over medium heat.  Add round steak and onion, cook for 5 minutes to brown.  Add garlic; cook for 1 minute.  Transfer to Bean Pot; add tomatoes, broth and seasonings.  Cover and bake for 4 hours.  Remove Bean Pot from oven; add potatoes, celery and carrots.  Return to oven for an additional hour.
